  1. Roc des Mates 2010, Château de Cazeneuve, Pic Saint-Loup

Roc des Mates 2010, Château de Cazeneuve, Pic Saint-Loup

    Sommelier

    The opinion of the sommelier

“Roc des Mates is strong, tannic and velvety at the same time. The taste is pleasant and silky. It has a long keeping potential thanks to his 18 ageing in barrels. Here you have a fine wine, very representative of the Pic Saint-Loup denomination. This very tannic wine will seduce those who love masculine wines. Open two hours before serving to round tannins”.

    Feuille

     Anecdote

     Winemaker

André Leenhardt, Dedé for his friends, was mayor of his village and president of the syndicate of Pic Saint-Loup wines. He purchased this winery in 1988. Wines from south of France are known for their character and wild aspect; however Dedé has successfully given roundness, fineness and smoothness to this strong wine.

     Terroir

    Terroir

Clayey soil, vegetation and Mediterranean climate are the stronger assets of terroir Pic Saint-Loup. Vineyards of this cuvee are situated on a mountain chain at 150 metres above sea level. In particular vines grow on calcareous-clay slopes that are skeletal thin and pebbly soils. 25-years old vineyards give good quality grapes since the age is in inverse proportion to quantity. Indeed smaller quantity allows grapes to grow better.

  2. Château Chapelle Labory 2015, Cuvée Parcellaire, Fronsac

Château Chapelle Labory 2015, Cuvée Parcellaire, Fronsac

    Sommelier

    The opinion of the sommelier

At the nose, remarkable flavours of black and red berries. At the palate, you’ll be charmed by the wine’s density and its elegance. Tannins are silky, with a chocolate taste which is a signature taste of amazing warm vintages. Wines of the vintage 2015 have a very noticeable ageing potential in Bordeaux. This Fronsac can be appreciated right now or in the next two or three years.

    Feuille

    Grape variety

The soil of Fronsac exalts Cabernet Franc, a grape variety that appreciates soils of clay and limestone! It is no coincidence if it is often grown in Libournais, the part of Bordeaux where Fronsac is. It is renowned for its aromatic sharpness, its spicy aromas and the ageing potential it provides to the wine. A subtle blend that celarly shows that even added in small quantity, some grapes can change a lot the wine.

  3. Per Dona 2014, Château Dona Baissas, Côtes du Roussillon Villages

Per Dona 2014, Château Dona Baissas, Côtes du Roussillon Villages

    Sommelier

    The opinion of the sommelier

This wine is a true lesson of seduction. Per Dona (« for the woman » in Catalan) displays a purple red robe, releases aromas reminiscent of strawberry and cocoa and its tannins are soft as silk. Château Dona Baissas managed to put all the charms of a wine in the same bottle ; I am a spellbound man !

    Feuille

    Grape variety

If Château Dona Baissas is a typical blend of southern wines, this is for a very good reason. Indeed, this assembly forms a very complementary trio. Grenache is expressed by its notes of red fruits, the syrah gives the freshness and a hint of spice and the Carignan carries off the matter with its tannins. A trio that expresses itself perfectly under the sun of Roussillon.

     Anecdote

    A winemaker, a family

Château Dona Baissas has been classified as one of the best wines of Languedoc-Roussillon since 1988, but its reputation is older than that. During the French Empire, a bunch of Napoleon’s officers discovered this little vineyard and fell in love with the beauty of the landscape, the quality of the wine and the owner. They therefore baptized the estate Mas de la Dona (« Mas of the woman » in Catalan). If the name evolved, the Dona persisted./p>

At 200 meters above sea level, facing the Mediterranean Sea and facing south, the vineyard dominates Roussillon. The parcels are sloping and the soil is rich in brown schists. 4. Les Racines 2014, Château du Vieux Puit, Blaye Côtes de Bordeaux

Les Racines 2014, Château du Vieux Puit, Blaye Côtes de Bordeaux

    Sommelier

    The opinion of the sommelier

What a straight and gourmet wine ! If the wines from Blayais are well known for their abundant yet softened tannins, this Vieux Puit seduced us also by the complexity of its aromas. Fruity flavours of blackberry, spicy pepper and liquorice, and even chocolate, worn by fine and melted tannins. A great success.

4 grape varieties in this cuvée ‘’Les Racines’’, which is rather rare in Bordeaux! Moreover, the cuvée gives an important place to two "small" grape varieties, since petit verdot and malbec together account for 8% of the blend. The opinion of the sommelier

« Gourmandise d’un été » is a very innovative and delicious version of Malbec! The fruit is ripe, a hint of flower adds refinement ; the finish is sweet, long and balanced with a little bitterness. The perfect rosé for just enjoying a glass with friends at sunset with a few olives.

Comme un goût d'été 2016 , Lionel Osmin, IGP Côtes de Gascogne

  7. Château Lieujean 2015, Cru Bourgeois, Haut-Médoc

Château Lieujean 2015, Cru Bourgeois, Haut-Médoc

    Sommelier

    The opinion of the sommelier

This month, I wanted to take advantage of the fabulous 2015 vintage in Bordeaux : I did that with the famous Château Lieujean, a safe bet of the Médoc vineyards, which is acclaimed by the greatest specialists. What differentiates this Cru Bourgeois is certainly its concentrated expression of black fruits accompanied by a subtle woody flavours. The tannins melt, the wine is supple, juicy and the finish is persistent and deep.

    Feuille

    Grape variety

An emblematic blend of Médoc, where Cabernet Sauvignon is predominant, associated with Merlot in smaller quantities. Le Clos des Vieux Marronniers 2016, Maison Jean Loron, Beaujolais

    Sommelier

    The opinion of the sommelier

Only black grape variety grown in Beaujolais, Gamay reveals a very different nature in Beaujolais soils. The wine is produced from old vines, with a deep root system which gives the grape granite’s minerality and an intense level of concentration. Only good Beaujolais can offer such a deepness of fruity aromas.

    Feuille

Gamay : the Beaujolais signature’s grape variety since Philippe le Hardi, Duke of Burgundy, banned it from Burgundy in the 14th century ! La relève 2015, Jeanne Gaillard, Saint Joseph

    Sommelier

    The opinion of the sommelier

Pierre Gaillard is one on the few Rhône Valley’s star winemakers. As Pierre ages, he is slowly putting his daughter Jeanne in charge of his best plots of vines. This is the meaning of this cuvee "La relève" (succession in French) which was designed and vinified by herself. This wine shows that Jeanne is more than a good choice to take over : this is the perfect mix between Gaillard’s amazing skills and a great vintage.

Être et Renaître 2014, AOP Corbières-Boutenac

    Sommelier

    The opinion of the sommelier

The nose is remarkably delicate, with notes of candied fruits and black berries, and a hint of smoke. On the mouth, the tannins are soft. The wine gives off a remarkable balance between power and freshness. This vintage of Etre et Renaître shows the inestimable potential of Carignan, a variety that used to be despised, especially when it comes from old vines.

    Feuille

However, it was only in 1985 that Corbières was recognized by the National Institute of Appellations of Origin (INAO). Hautes-Côtes-de-Beaune 2015, Nicolas Potel

    Sommelier

    The opinion of the sommelier

The appellation Hautes Côtes de Beaune is famous for its delicate red wines. This vintage is not an exception: a bright, shiny, cherry-red colour, and candied redcurrant and strawberry aromas, enhanced by spicy flavours ! On the palate, the wine is subtle, carried by a generous silky texture. The signature of a nice Burgundy wine, as I love them !

    Feuille

The vines are planted on sloping soils which causes a good drainage ensuring that there will be no excess water in the berries that could damage the intensity of the wines. Moreover, the soil is made of limestone, which is a very filtering stone that gives some minerality to the wine.

    The opinion of the sommelier

I am a huge lover of Gros Manseng. This grape variety, mainly grown in the South-West, creates fruity wines, gathering both sweet and exotic aromas, with freshness that balances the wine and makes the third glass as enjoyable as the first one... It allows sweet and sour pairings which are very interesting, and I really like opening a bottle with friends with a good goat cheese served with honey or jam.

    Feuille

    Grape variety

Gros Manseng is a typical Southwestern grape variety. It can be at the origin of sweet or dry wines. On a dry wine like Trio Tempo, it offers an impression of sweetness subtler than with a sweet wine, on a fresh frame and with hint of acidity which creates the balance. A fruity and fresh experience !

Located right in the heart of Gascony, the vineyard benefits from an oceanic climate. Thanks to the proximity of the Pyrenees Mountains, the wide temperature gap between day and at night is ideal to ripen the grapes while protecting their aromas. Indeed, the production of sugars is stimulated during the hot period of the day and the natural acidity is increased during the night.

This Comté Tolosan is incredibly bright ! Plunge your nose in the glass and discover this delicate fragrance of acacia and honey. Can you feel it ? When the wine met my palate, the result matched my expectations : balanced, ample and concentrated, giving the wine a beautiful aromatic persistence on the finish. There are aromas of brioche and butter, and intermingled with notes of honey, I felt back in my lovely childhood days !

    The opinion of the sommelier

Cahors is the birthplace of Malbec and still produces the purest wines from this now widely known grape variety. Not far from Cahors, Calicôt comes from vineyards growing along the bank of the Lot, a humid terroir that gives fruitier wines with the extra freshness that makes it easy to drink and to appreciate at any time.

Malbec, the most famous grape variety of the region, blooms on the gravelly and sandy soils of the Southwest. It as well likes large temperature gaps between day and night, a phenomenon that it also found in the Andes in Argentina where it became the main black grape variety. The story of Mas la Chevalière began in the 80s when Michel Laroche, winemaker in Chablis in Burgundy, discovered the great potential of the terroirs of Languedoc. The altitude, the diversity of the soil, the exhibition, everything was brought together to elaborate great wines ! Then, few years later, he decided to buy Mas la Chevalière, this beautiful property of character, and its 40 hectares of vines. Ever since, the winery has become known for the quality of its wines./p>
