    The opinion of the sommelier

    2009 is one of the best vintages Saint-Emilion ever produced. One could even compare it to the legendary 2005 vintage, known to have been the best vintage in Bordeaux for decades. Thus, it was important to me to select a wine that could introduce you to great Bordeaux vintages. And of all the wines I tasted, Château Grand Lartigue was the one showing best this wonderful combination of strength, fruit and tannins that 2009 gave us. This wine is to be paired with you best meals!

    Grape variety

    Cabernet franc is widespread in the right bank of Bordeaux, but also in the Loire Valley ! The terroir allows it to reach maturity one week before the cabernet sauvignon does, which allows the winemakers to take more time to protect the grapes during the harvest. It is widely grown in Saint- Emilion, and is even the main variety used for one of the most famous wine in the world: Château Cheval Blanc (60%). It is less tannic than cabernet sauvignon, so it ages faster and can be drunk earlier.

    Pierre Chollet is the director of Château Grand Lartigue, a property which covers 5 hectares in Saint-Emilion. His company Vitis Vintage resurrected this forgotten estate in 2001. They built a new winery and completely changed the agricultural process. For example, Chollet decided to stop using chemical fertilizer.

     The terroir of Saint-Emilion is one of the most famous in the world, and there is reason for that: it is also one of the best ! The ground is a mix of very old sand and wet clay. Moreover, the rules of the appellation are very strict: winemakers cannot make more than 40 hl of wine per hectare, and the wine has to age at least 12 months in oak barrels.

    I was really surprised to find such a good value for money in Bordeaux. Certainly, it is not at the level of the best “Grands Crus” of Bordeaux, but this vintage of Château Monrecueil has a lot to offer and is perfect for a Sunday family meal! The nose reveals herbaceous - I particularly found the fern - and floral aromas. On the palate, the wine is soft, fresh and fruity, which is the signature of a wine only elaborated with merlot.

    Merlot is now the main grape variety in Bordeaux (it used to be cabernet sauvignon). Merlot is known to give soft wines with a silkier texture and less tannins than its friend cabernet sauvignon. Fun fact: Chateau Petrus, the most expensive Bordeaux wine made in Pomerol next to Saint- Emilion, is made from merlot at 95%.

    Throughout history, the estate had very numerous owners. The most famous one, François de Belcier, secretary of Louis XVI, got his head cut off during the French Revolution. Nowadays, the estate is owned by MACIF, an insurance company that invested like many other insurance companies in Bordeaux estates. They put a new team in charge.

     The estate is located on the terroir of Castillon - Côtes de Bordeaux, one of the first areas where vines were planted in Bordeaux millenniums ago. This land is adjacent to Saint-Emilion and therefore has a clay and limestone soil of high quality. If you enjoy gardening, you might know that clay retains a lot of water. Therefore, the vine is perfectly moistened all the time. Limestone is a great friend to clay as it drains really well the water and retains heat that it gives back to the vine during colder times.

    I am in love with this Pessac-Léognan, typical of the appellation, and I think it will charm you. The aging in oak barrels gave the wine sophisticated smells of cocoa, coffee and vanilla. In the mouth, I really enjoyed its silky tannins and the fruity aromas that recall the presence of merlot and petit verdot in the blend. You’ll enjoy this wine on beef pieces cooked rare.

    The combination of cabernet sauvignon and merlot is very usual in Bordeaux. The strong structure and the tannins of the cabernet sauvignon make a wonderful couple with the fruits and the softness of the merlot. The blend also includes a little of petit verdot, an historical variety in Bordeaux, that gives a deep colour and even more tannins

    Château d’Eyran became the property of the de Seze family in 1796. And more than two centuries later, they still run the vineyard! And apparently, there centuries old skills are really appreciated considering the success of the Château d’Eyran in Pessac-Leognan. The wines are aged in oak barrels, providing harmonious woody flavours and aromas.

     Pessac-Léognan is known to be the best part of a bigger appellation in Bordeaux called “Graves”. It comes from ancient French and means pebbles. Indeed, for millenniums, the Garonne River has been bringing all those pebbles therefore creating one of the best terroir in the world. Indeed, the “graves” challenge the vine to find its nutrients, which makes it stronger, and reflects the heat from the sun to the grapes.

    What I love about this wine is that when you smell it, you instantly land in the south of France during a sunny summer listening at the cicadas singing. Each of the three grape varieties perfectly play their part bringing together spicy flavours, red berries aromas and a long and fresh finish. This gourmet wine will perfectly pair with mixed salads with sliced ham and olives.

    The blending of these three varieties is fairly typical of wines from the Languedoc appellation, and gives birth to balanced wines. Syrah brings colour to the wine and a framed structure, when the grenache shines through its generosity with its silky texture and its aromas of red and black fruits. Mourvèdre enriches the aromas with flavours of more complex spices, especially pepper.

    Through its wines, Jean-Benoît Cavalier wants to demonstrate all the generosity of the Languedoc terroirs. To reach this goal, he had to take risks by modernizing his winemaking facility during the 1990s. This bet was a success as Château Lascaux is one of the most famous names in the area.

     The Languedoc-Roussillon vineyard is the oldest and largest vineyard in the world, spanning more than 200 000 hectares. The terroir of Château Lascaux is distinguished by its very hard limestone soils covered with garrigue. This vegetation made of juniper, thyme, rosemary, lavender and sage is typical of the south of France. Its scents remind heat, cicadas and relaxation. Close to the garrigue, grapes impregnate its flavours and then take it all the way through the bottle onto your palate. Well done!

    I selected this wine from Domaine Jean-Maurice Raffault because even if it was just bottled as it is the 2014 vintage, it already shows a lot of richness. Its aromas of strawberry and spices are typical of the Loire Valley, but the aromas of banana are more unexpected. Having fun with wine by being surprised is something I love. To enjoy the wine even more, pair it with a tripe sausage or a camembert cheese.

    Cabernet franc is one of the oldest varieties of the Bordeaux region, where it is from. It is still cultivated by some of the most prestigious Château like Cheval-Blanc in Saint-Emilion. The fact that it matures so quickly (it is quite often the first variety harvested in Bordeaux) allows it to be cultivated in the Loire Valley, even if it is a colder region.

    In 1693, Mathurin Bottreau, ancestor of theRaffault family, became the owner of the family’s first vines. Since then, 14 generations have worked on the development of the estate! Rodolphe Raffault, now in charge of the vineyard, is constantly looking for innovation in the making of his wines. He was among the first ones implementing malolactic fermentation in Chinon to soften the tastes of the wines.

     The town of Chinon is located on the banks of the Vienne River in Indre-et-Loire. The vineyards of Chinon are located in a really unique microclimate that reminds some places around the Mediterranean Sea. The soil consists almost entirely of erosional scree and gravels on top of rather hard limestone.

    Bordeaux is mostly famous thanks to the wines elaborated in Médoc on the left bank of the Gironde River. The dominant variety there is cabernet sauvignon. On the right bank, merlot is the main variety so the wines are known to be fruitier and less tannic. This one has spent 6 months aging in oak barrels: do you feel the aromas of wood and vanilla?

    Merlot is the main variety in the Bordeaux region. The tale is that its name comes from the blackbirds, merles in French, who love to peck the grapes of merlot.     When Jacques Chardat arrived in 1991, the Château Lacaussade Saint-Martin was kind of a sleeping beauty. This oenologist from the University of Bordeaux was very ambitious, and started buying new vines to improve the global quality of the wine. More than 20 years later, the vineyard is now 50 hectares (it was 18 hectares in 1991) and produces a wine appreciated by some of the most influential wine critics.

     Along the Gironde River, the Chateau Lacaussade Saint-Martin is located on a poor ground made of a limestone vein, specific to the terroir which name is Blayais. As you might already know, the vines are fond of poor grounds. Indeed, the vine has to suffer from water stress in order to give concentrated fruits.

    I am really glad to present you Château d’Epiré as I think it is the best way to discover one of the best appellations in the Loire Valley for white wines: Savennières. The smell is expressive, with flavours of green apple and lemon. The taste is fresh and the finish displays displays very nice mineral aromas, typical from Savennières. Do not forget to serve it chilled, between 8 and 10°C!

    In Savennières, things are simple as there is only one variety planted: chenin. This variety fully expresses its potential on grounds of limestone, which was also used to build the Châteaux de la Loire. Just remember that chenin is an elegant variety with refined aromas of tree fruits, dried fruits, citrus fruits, white flowers and even honey. Sounds good, doesn’t it ?

    Many people in the Savennières area consider the Château d’Epiré an historical treasure. Indeed, it is the only vineyard that has remained in the same family, the Bizard family, since the 17th Century. Nowadays, it is Luc who manages the vineyard with the will of giving to his wines the mineral aromas typical from Savennières and to perpetuate the family traditions.

     Savennières’reputation comes from its dry white wines, often called the « Grands Crus » of the Loire Valley. The terroir of Savennières is located in a microclimate that offers the benefits of not having too many thunderstorms. Thus, the grapes mature faster and better than around the appellation.

    It’s as if the beauty of Château d’Eck reflects on its wines like the sun in a mirror. This magnificent castle makes the pride of the Pessac-Léognan appellation. The wine displays aromas of cherry and wood, especially cedar. If you wish, you can keep it in your cellar so its aromas and texture evolve: it can ages up to seven years!

    The merlot is fruity and low in tannins. The cabernet sauvignon is strong in tannins and displays mainly vegetal aromas. The two were made to complete each other. And that is what Bordeaux is all about since the blend merlot and cabernet sauvignon is the most typical one there. But I would like to draw your attention to the petit verdot. It has always been present in Bordeaux, and since it is not sensitive to rot, it is more and more grown as the winemakers try to cut on pesticides.

    Located in Cadaujac just outside of Bordeaux, the Château d’Eck is a real medieval castle where one of the best wines of Pessac-Léognan is made. The castle was the first property of the Duke of Aquitaine and then it belonged to the King of England when the region was under English domination. François Eck inherited the castle and the estate in 1824 and gave it his own name!

     The Pessac-Léognan appel-lation was created 30 years ago to distinguish the best part of the Graves appellation. Graves is a big appellation that got its name from the stones that lie on the ground (Graves means pebble in old French) and helps the grapes to mature by accumulating the heat during the day and redistributing it during the night.

    Cadillac is a small unknown appellation of Bordeaux, which is a shame as there are magnificent wines elaborated there! Château Le Thys is a good example. Even if it was acquired a few years ago by its neighbour Château Birot, grapes are still vinified separately so as to reveal the whole potential of this specific terroir along the Garonne River.

    If you like merlot, this wine is for you. Château Le Thys is the perfect example of what can give well grown merlot. Indeed, it displays seductive aromas and a silky texture with thin and refined tannins. This explains why merlot can be found all over the world! Chile, Australia, Hungary... it is everywhere!

    If on a trip in the Bordeaux region you feel like tasting Château Le Thys’ wines, you’ll be welcomed in Chateau Birot, an astonishing 18th century castle. It was entirely renovated in 1989 by Eric and Helene Fournier-Casteja. Nowadays, two out of their five sons rule the Family Estate.

     Château le Thys’ vines cover around 40 hectares and their specificity is that they are surrounded by tree hedges. It’s a great perk as it protects the grapes from strong winds in their youth (when they are too fragile to stand it) and the soil from erosion.

    This little vineyard in Médoc is a nice discovery. The attack is very pleasant and the aromatic profile of this wine is complex, mainly based on strawberry and blackcurrant aromas perfectly enhanced by a marked acidity. This wine is at the beginning of its peak, but if you enjoy tertiary aromas, it will easily wait for you a few years in your cellar.

    Merlot and cabernet sauvignon is the most widespread blend in Bordeaux. Cabernet franc, without being rare, is less common. It’s the main variety in Chinon in the Loire Valley and it is often used in Bordeaux to complete the blends with its fresh red berries aromas.

    Château Bellegrave du Poujeau is a typical example of what is called a gardener’s wine. With only 4 hectares, Jean-Pierre Cantelaube can give a lot of attention to each of his vine stocks. For example, they are all pruned individually which allow to reach the highest level of ripeness possible each time, so there are no more bad vintages!

     The vines are planted on a particularly thick ground of Graves. These big and hard round pebbles do not retain water and nutrients on the contrary to the layer of clay these lie on. Therefore, vines’ roots have to struggle through the pebbles to get their water and nutrients in the clay. It is a good thing as it forces the vine to be stronger so as to reveal the whole potential of the grapes!

    I chose for you this nice Beaujolais Village by Château de l’Eclair, a winery I especially appreciate as I used to teach there wine tasting to tourists from all over the world ! This wine is a good example of the best Beaujolais can give when it comes to produce simple yet quality wines. I suggest you enjoy this wine before dinner paired with a nice charcuterie board. Will you be able to feel the carbonic maceration ?

    This variety is often called “gamay noir à jus blanc” which means “black gamay with white juice”. The reason is that this variety is special: it has a very dark skin and a very white flesh. 98% of Beaujolais’ vines are gamay. Therefore, Beaujolais alone produces the two third of gamay grown worldwide. Gamay gives to the wine fresh fruity aromas with sometimes a hint of spice.

    “L’éclair” refers to a device that allows winemakers to easily spray natural fertilisers on the vines. It was invented by Victor Vermorel, a French eccentric politician and inventor. Vermorel bought Château Convert in 1871 from a rich family from Lyon and gave it the name of his invention.

To pair it perfectly, I suggest you serve it with grilled white fish or oysters.

    In 1994, Patrick Somers, heir of a family of Belgian wine merchants and passionate about winemaking, decided to produce his own wine. To do so, he visited a few vineyards, and felt in love with Château les Donats that he bought and entirely renovated. To keep on improving the quality of the wines, he was joined in 2011 by the oenologist Olivier Verhelst who implemented new cultivation techniques and updated the winemaking process./p>

     Château les Donats’ vines cover 15 hectares on the sides a valley digged throughout the millenniums by the Dordogne River in the heart of Périgord. The plots have various exposures to the sun.     In the heart of Maine-et-Loire, you will find a very good appellation that I especially enjoy : Saumur-Champigny. To me, Château de Targé reflects the best you can do on this amazing terroir of the Loire Valley. The wine offers a nice garnet colour with purple reflections, a fruity nose with a strong intensity, and a silky mouthfeel enhanced by soft tannins revealing the characteristics of cabernet franc. A wine that perfectly pairs with a capon stuffed with porcini mushrooms.

    Cabernet franc comes straight from the Southern Basque Country in northern Spain and was originally brought back to the south west of France by pilgrims coming back from Santiago de Compostela. It took centuries to find its way to the Loire Valley where it was first planted during the 11th Century.     Château de Targé has welcomed a lot of famous people through the centuries ! Originally, it used to be the personal vineyard of Phélypeaux de Pontchartrain, Louis XIV’s secretary. Then, the Targé-Parnay family inherited it, and one of its members, Henri, was close to many politicians under the 3rd Republic, so former Minister of State Léon Gambetta was often invited to the Château. Then, the estate was transmitted to Edgard Pisani, minister of Charles De Gaulle and is still run by his son Edouard nowadays./p>

     Saumur-Champigny’sbest asset is a soil rich in tuffeau stone, a chalky stone that absorbs most of the rain that falls during winter and gives it back slowly and regularly during summer. Thus, during the heat of summer, the sun ripens the grapes while the soil refreshes it through the roots hence ensuring a perfect balance between sugar, alcohol and acidity.

    Mercurey is not any appellation in Burgundy. Indeed, it is the biggest appellation in the Côte Chalonnaise sub-region and it is known for the intensity of red berries aromas the terroir gives to pinot noir there. This batch is particularly remarkable as it blends the aromas typical of Mercurey with refined woody notes that bring more complexity and smoky aromas. A great wine !

    Wines made from pinot noir have the specificity of displaying a light colour. Tasted during their youth, the wines have fresh aromas of cherry, raspberry and blackberry. As the wine ages, these aromas evolve into more ripened fruits and leather. The good news is that only the pinot noirs elaborated on the best terroirs can age, which is absolutely the case with this wonderful Mercurey that can age up to 6 years.

    In 1875, Antoine Rodet, son of a grocer, inherited a few hectares of land after he married the daughter of a farmer. At that time, the area of Chalon-sur-Saône was going through an economic boom and the young Antoine took the opportunity to invest in agricultural equipment to turn his farm into a vineyard. A few years later, his ambitious son Antonin took over, gave the vineyard his name, and developed it, building the basis of the large and famous winery that Rodet is nowadays.

     The vineyards in Mercurey benefit from a special terroir as it lies on a hilly relief that alternates gentle and steep slopes. This kind of relief has a huge advantage: it allows winemakers to harvest grapes that were grown under different exposures to the sun and with different levels of water stress so as to elaborate wine with a lot of complexity.

    This month, let’s go to Bordeaux to discover this magnificent batch by Château de Teste. This wine perfectly reveals the richness of its terroir during the tasting. The colour is purple with dark pink reflection. At the nose I smelled surprising aromas of cinnamon and hibiscus. The wine is also characterized by a good length and it ends on a nice touch of acidity.

    Merlot is the most grown variety in Bordeaux. It is known for giving warm wines with sweet flavours, a silky texture and soft and discrete tannins. To give more structure to the wines, merlot is really often blended with cabernet-sauvignon, which used to be the main grape in the Bordeaux area until the 20th century and is known to have a stronger structure.

    Located in the bank of the Gironde River, Château de Teste overlooks the vines of the small village of Montprimpblanc which was before named Monte Primulus which means in Latin the daisies’ mountain. The vines did not always reign on the hills of the region! Nowadays, the daisies are gone and the estate belongs to Laurent Réglat, passionate winemaker who produces wines in several appellations: Sainte-Croix-du-Mont and Cadillac.

     The specificity of the Graves appellation is that it got its name from its soil. In French, “graves” are round hard pebbles that are really appreciated by winemakers. Indeed, those retain the warmth provided by the sun during the day and give it back to the grapes at night. Therefore, the berries never stop ripening.

The nose is so explosive that once the wine is poured in the glass, it’s really hard to resist to the desire of taking immediately a sip. This wine is a perfect example of the best Languedoc can give. This kind of wine is also very interesting because it’s so consensual that it can be paired with a lot of different dishes.

    This delicious red wine from Corbières is a blend between the four most common grape varieties in Languedoc. Mourvedre is a little fragile, so it was abandoned after the phylloxera crisis. However, this variety gives a lot of complexity and increases the aging potential. Thus, since 1960, mourvedre has been widely re-planted in Provence and Languedoc.

     Located in the Corbières Mountains, Château Saint-Estève’s vines take advantage of the chalky soil of the region which gives fresh and acidulous aromas.     You might have noticed that Château Ramage la Batisse is a “Cru Bourgeois”. What does it mean? Maybe you know that the wines made in Medoc (the prestigious part of Bordeaux’s left bank) were ranked in 1855. But since then, the ranking hasn’t changed even though a lot of new great wines emerged in Médoc. The “Cru Bourgois” ranking was created in 1932 to award these new talents from Médoc.

    If merlot is the most planted variety in Bordeaux, it is pretty uncommon to find so much merlot in a wine from Médoc ! Indeed, in this part of Bordeaux, cabernet-sauvignon is the king as it gives its best on soils made of graves. However, this choice of adding a lot of merlot was good as it is what gives this wine its silky texture that swathes cabernet-sauvignon strong tannins.

    Since 1961, Château Ramage la Batisse has slowly but surely become a star of the Haut-Médoc. The 95 hectares of the estate were entrusted in 1990 to renowned winemaker Georges Pauli. Thanks to its hard work and the modernization of the winery, Château Ramage la Batisse eventually became a Cru Bourgeois in 2003. Well done Georges !

     Located in the heart of Médoc, the vines are planted on a chalky underground whereas the ground itself is made of graves. So it is a poor soil that naturally limits the vines’ yield.     In this month of April, I am proud to present you Origami by Chateau l’Evêché. This wine is a perfect example of the best you can find on the right bank of Bordeaux ! Its main characteristic is an amazing smoothness that will enchant your buds. Moreover, this wine is amazingly balanced and blackberries aromas pair perfectly with vanilla flavours brought by a delicate maturation in oak barrels.

    This wine is mainly elaborated with merlot as are most wines from Bordeaux’s right bank. Merlot gives flattering fruity wines but needs a lot of care and attention to gain complexity. Indeed, merlot is a fertile variety which gives high quantity of low quality wines when it’s let entirely free. Like other right bank good winemakers, Chateau l’Evêché masters the art of stressing merlot so it gives powerful and refined wines.

It was then awaken in 2008 after a long hibernation when Jean Sébastien Capdevielle and Anthony Ginter got in charge of the 6 hectares located in Nerigean./p>

     Château l’Evêché, a rising star of Saint-Emilion, also owns 6 hectares just on the other side of the Dordogne River. Merlot and cabernet franc, the only variety used in Château Cheval Blanc, are cultivated with as much care as for the Grand Cru. The only difference is that this side of the river is sunnier and wines are therefore a little sweeter. Yummy!

    It’s a very typical Cru Bourgeois that I chose this month. The robe is dark and deep. The nose is complex, with hints of spice, and is very promising. On the palate, I was impressed by its perfect balance and its amazing structure. The aromas of violet and red berries perfectly pair with the aromas of licorice, sign of delicate aging in oak barrels. A very refined Cru Bourgeois, quite classical in its structure but quite original in its aromas.

    Burgundy’s red wines arefascinating : they all are elaborated with the same grape variety and yet they offer an astonishing diversity. This is due to the unique diversity of terroirs in the region. This Hautes Côtes de Beaune displays beautiful aromas of raspberry and rose delicately enhanced by a gentle acidity and very thin tannins. However, pinot noir is a fragile and demanding variety : do not hesitate to aerate it several hours before service so it fully displays its bouquet.

    In Burgundy, all the great white wines come from chardonnay and all the red from pinot noir. But if chardonnay is robust and can be planted virtually everywhere, pinot noir is different. Indeed, pinot needs sun to develop its aromas but not too much heat. Moreover, it needs wind to remain healthy. Therefore, pinot enjoys sloppy northern region, like Burgundy and Champagne where it is widely grown !

     Long strip bordering Côte de Beaune’s villages on the west, Hautes Côtes de Beaune are a succession of hills and valleys. Thus, vines are all planted on slopes which allow them to benefit from a good exposure to sun and wind. It ensures a good level of ripeness, which is very important in such a northern region, and keeps the wine healthy, also very important for pinot noir, a noticeably fragile grape variety.
