    The opinion of the sommelier

    For Christmas, I chose this delicious cuvee from Domaine François Schwach & Fils. This wine is according to me a good example of the best Alsace has to offer. Only that region is able to elaborate wines that blend so well elegance and sweetness. This wine is amazing to see, to smell and to taste and will perfectly pair with foie gras.

    Grape variety

    Gewürztraminer is one of the most common varieties in Alsace and can be recognized even in the vines thanks to the light pink colour of its small berries. Its smell is very typical as well: it exhales delicious odours of exotic fruits and on the palate it is recognizable thanks to its creamy texture balanced by a lot of freshness. Good to know: this variety is often harvested late in order to make amazing sweet wines.

    Domaine Schwach has grown slowly but surely. In 1950, François Schwach, a wine merchant passionate about viticulture, bought his first plots of vines and spent 10 years working on them before selling the first bottles. In 1975, Philippe took over and extended the vineyard by buying more plots, acre after acre. Still today, Sébastien, Philippe’s son, deeply thinks about each decision and never drifts away from the culture of excellence that prevails in the family.

     Hidden behind the Vosges Mountains, Alsace is protected from the influences of the ocean. It therefore enjoys a continental climate with very cold winters and very warm summers. A consequence of this is that grapes keep a lot of freshness until late and then ripen very fast during summer. That’s why even dry wines from Alsace seem a little sweet on the palate.

    You do not even need to pour the first glass to experience this wine. Immediatly after opening the bottle, you can already smell the powerful ripened fruits aromas exhaling in the room. On the palate, it’s an ecstasy. You will certainly notice this incredibly soft texture that glides over the tongue. These concentrated and powerful wines are the new signature of the Languedoc region. This is the perfect wine for a Christmas turkey served with cranberry sauce.

    Cinsault, the variety in minority in this blend, comes from Provence and thrives in warm and dry areas. It’s why it was widely planted in Algeria during the French period. Its main perk is that it develops very smooth fruity aromas even before reaching ripeness. It makes it a perfect addition to a blend so as to add complexity to the wine. It is also great used by itself to elaborate rosé wines.

    Olivier Villaneuva is part of thisfirst generation of winemakers who travelled the world to work in various wine estates around the planet before returning home to take care of the family vineyard. Villaneuva joined his parents at Mas Onésime in 1999 with the goal of bottling himself the wine before bought by the local cooperative. He succeeded in 2011 with a good vintage that quickly won over the critics.

     In the hills behind the Mediterranean Sea coast, Mas Onésime’s vines are planted on schist based soils. This specific kind of soils allows vines’ roots to go particularly deep in the ground in order to find their water and nutrients. It’s a real perk in such a dry region as Languedoc!

    Château de Saint Pey is mainly known for its Saint Emilion Grand Cru, but it also produces in the neighbouring vines a second wine called “S de Saint Pey” which benefits from a very comparable terroir, but at a more reasonable price ! S de Saint Pey is a real bargain that shall be tasted immediately.

    Château de Saint Pey and S de Saint Pey are both typical Bordeaux blends. Merlot particularly enjoys soils of clay because it ripens more easily than cabernet-sauvignon that needs a lot of care to grow well on this kind of terroirs.

    In the heart of Maine-et-Loire, you will find a very good appellation that I especially enjoy : Saumur-Champigny. To me, Château de Targé reflects the best you can do on this amazing terroir of the Loire Valley. The wine offers a nice garnet colour with purple reflections, a fruity nose with a strong intensity, and a silky mouthfeel enhanced by soft tannins revealing the characteristics of cabernet franc. A wine that perfectly pairs with a capon stuffed with porcini mushrooms.

    Cabernet franc comes straight from the Southern Basque Country in northern Spain and was originally brought back to the south west of France by pilgrims coming back from Santiago de Compostela. It took centuries to find its way to the Loire Valley where it was first planted during the 11th Century. However, cabernet franc was a total hit there as it is today the main black grape variety in the region !

    Château de Targé has welcomed a lot of famous people through the centuries ! Originally, it used to be the personal vineyard of Phélypeaux de Pontchartrain, Louis XIV’s secretary. Then, the Targé-Parnay family inherited it, and one of its members, Henri, was close to many politicians under the 3rd Republic, so former Minister of State Léon Gambetta was often invited to the Château. Then, the estate was transmitted to Edgard Pisani, minister of Charles De Gaulle and is still run by his son Edouard nowadays./p>

     Saumur-Champigny’sbest asset is a soil rich in tuffeau stone, a chalky stone that absorbs most of the rain that falls during winter and gives it back slowly and regularly during summer. Thus, during the heat of summer, the sun ripens the grapes while the soil refreshes it through the roots hence ensuring a perfect balance between sugar, alcohol and acidity.

    Mercurey is not any appellation in Burgundy. Indeed, it is the biggest appellation in the Côte Chalonnaise sub-region and it is known for the intensity of red berries aromas the terroir gives to pinot noir there. This batch is particularly remarkable as it blends the aromas typical of Mercurey with refined woody notes that bring more complexity and smoky aromas. A great wine !

    Wines made from pinot noir have the specificity of displaying a light colour. Tasted during their youth, the wines have fresh aromas of cherry, raspberry and blackberry. As the wine ages, these aromas evolve into more ripened fruits and leather. The good news is that only the pinot noirs elaborated on the best terroirs can age, which is absolutely the case with this wonderful Mercurey that can age up to 6 years.

    In 1875, Antoine Rodet, son of a grocer, inherited a few hectares of land after he married the daughter of a farmer. At that time, the area of Chalon-sur-Saône was going through an economic boom and the young Antoine took the opportunity to invest in agricultural equipment to turn his farm into a vineyard. A few years later, his ambitious son Antonin took over, gave the vineyard his name, and developed it, building the basis of the large and famous winery that Rodet is nowadays.

     The vineyards in Mercurey benefit from a special terroir as it lies on a hilly relief that alternates gentle and steep slopes. This kind of relief has a huge advantage: it allows winemakers to harvest grapes that were grown under different exposures to the sun and with different levels of water stress so as to elaborate wine with a lot of complexity.

    This month, let’s go to Bordeaux to discover this magnificent batch by Château de Teste. This wine perfectly reveals the richness of its terroir during the tasting. The colour is purple with dark pink reflection. At the nose I smelled surprising aromas of cinnamon and hibiscus. The wine is also characterized by a good length and it ends on a nice touch of acidity.

    Merlot is the most grown variety in Bordeaux. It is known for giving warm wines with sweet flavours, a silky texture and soft and discrete tannins. To give more structure to the wines, merlot is really often blended with cabernet-sauvignon, which used to be the main grape in the Bordeaux area until the 20th century and is known to have a stronger structure.

    Located in the bank of the Gironde River, Château de Teste overlooks the vines of the small village of Montprimpblanc which was before named Monte Primulus which means in Latin the daisies’ mountain. The vines did not always reign on the hills of the region! Nowadays, the daisies are gone and the estate belongs to Laurent Réglat, passionate winemaker who produces wines in several appellations: Sainte-Croix-du-Mont and Cadillac.

     The specificity of the Graves appellation is that it got its name from its soil. In French, “graves” are round hard pebbles that are really appreciated by winemakers. Indeed, those retain the warmth provided by the sun during the day and give it back to the grapes at night. Therefore, the berries never stop ripening.

    This wine is a deliciousconcentrate of fresh fruits and spices enhanced by just the right amount of woody aromas. The nose is so explosive that once the wine is poured in the glass, it’s really hard to resist to the desire of taking immediately a sip. This wine is a perfect example of the best Languedoc can give. This kind of wine is also very interesting because it’s so consensual that it can be paired with a lot of different dishes.

    This delicious red wine from Corbières is a blend between the four most common grape varieties in Languedoc. Mourvedre is a little fragile, so it was abandoned after the phylloxera crisis. However, this variety gives a lot of complexity and increases the aging potential. Thus, since 1960, mourvedre has been widely re-planted in Provence and Languedoc.

    Henry de Monfreid was a famous adventurer who explored the surroundings of the Red Sea. Hubert Latham was among the first who tried to fly over the English Channel … The least we can say is that Eric and Sylvie Latham’s ancestors did not lack audacity ! Neither do Eric and Sylvie who came back from Ivory Coast where they were selling cocoa and coffee to buy Chateau Saint-Esteve to fulfil their dream of making generous wines./p>

     Located in the Corbières Mountains, Château Saint-Estève’s vines take advantage of the chalky soil of the region which gives fresh and acidulous aromas. Those balance the power given by the sun that shines strongly in this southern area. The vines are on average quite old which explains the high concentration of this wine.

    Second wines from Bordeaux renowned Chateaux are often an opportunity to feel the same king of sensation but for a far more affordable price ! However, the vines and therefore the grapes take advantage from the same skills and the terroir are often quite similar, which allow sometimes the second wine to be more looked for than the chateaux. Liversan is a good example of that : its second wine really is not so different from the Chateau itself.

    Cabernet sauvignon is known to be the main variety of all the grand crus Classé in Médoc. It’s a variety that need heat as it ripen relatively slowly, especially in a rainy region like Bordeaux. But this variety has a great advantage : it gives an outstanding tannic structureto wines which allow the best ones to age for decades.

In 2017, it was acquired by Antoine Moueix Propriétés, a rising star of Bordeaux making high quality wines on both banks./p>

     Haut-Médoc is on Bordeaux left bank and is known for its famous villages as Margaux or Pauillac. This appellation only produces red wines on pebbles called graves that thanks to the warmth they keep from daylight help the grapes to ripen and grow strong yet silky tannins.

    Drinking ten years old wines is not that common and even less with wines from the Loire Valley ! That’s why I am happy to present you this 2006 malbec that literally impressed me. This wine displays at the same time a nice freshness and abundant but thin tannins. These two facts allowed it to age through all these years. Nowadays, this wine exhales nice aromas or red pepper, humus and mushrooms. The silky texture is also an enchantment. All my congratulations to the winemakers !

    Malbec is originally from Cahors, a famous wine producing town in the South West of France. During Renaissance, it was imported in the Loire Valley where it’s better known under the name of “côt”. It’s a slowgrowing variety that demands to be harvested at full maturity. It is also very sensitive to frost. Cultivating it in Touraine, a northern region, is therefore a pretty rough challenge !

    Violine du Roy is not a traditional wine estate. It is basically the association of several talented winemakers who decided to put part of their grapes and skills together to try to make new unconventional small batches. With this Malbec, they wanted to show that by selecting the right grapes and vinifying it the right way, you can obtain wines that can age up to 20 years !/p>

     The vines that were used to elaborate this Malbec grow on a specific soil called “perruches”. This kind of soil, relatively rare elsewhere in the world, is in fact quite common in the Loire Valley. It’s a blend of flint, clay and silica. Flint keeps the warmth and bring minerality, whereas clay and silica stress the vines so those give the best out of themselves, forcing the grapes to concentrate.

    This 2015 vintage of Château Belle Grange really impressed me. It’s very elegant, has a lot of structure and is very full bodied without being heavy, and it has a very long finish. But what distinguishes it from other Saint-Emilion is its unique flavours of flowers that will charm you.

    In Saint-Emilion, Bordeaux is predominant almost all the time. Merlot enjoys soils of clay which keep its grape fresh (otherwise, this variety tends to make too much alcohol). On the other side, cabernet sauvignon enjoys pebbles as it keeps warmth which is useful for this variety which finds it harder to ripen.

    Verhaeghe Family has a 200 years old history of making wine in Bordeaux. They own estates in Saint-Emilion and in Bordeaux Supérieur appellations. Around half of the vineyard is already certified organic : the other half will soon be and the future vintages starting from 2017 will be certified organic. /p>

     Château Belle Grange’s terroir is interesting as it covers the two sides of a hill. One side is made of clay, which is the case in most of the appellation; the other side is made of pebbles, which is more common in Médoc on the other side of Bordeaux. Both combined allow to make great merlot as well as great cabernet-sauvignon which give this great wine once blended.

    It’s with great pleasure that I bring to you this great Graves, appellation very well known among Bordeaux lovers for its style very close to neighbouring Pessac-Léognan. The balance between Cabernet Sauvignon and Merlot is perfect and reveals all the best on this 2015 vintage, one of the best Bordeaux ever had.

    When it’s nurtured by a lot of sun as it was the case in 2015, Merlot expresses its full aromatic potential. It gives to Pontey-Lamartine flavours of spices and mushrooms, with a hint of clove. On this terroir, Cabernet-Sauvignon is at its best and gives the tannic structure and the power that will elegantly melt through the years.

    Generation after generation, Dominique Haverlan and his family thrive on Bordeaux’s terroirs. Dominique took his independence from his family in 1988 when he bought Château Gaubert. It worked well, so he continued the adventure in Pessac-Leognan. That also worked well, so he came to Graves to get a terroir almost as good as Pessac but for a much cheaper price so as to produce great wines for decent prices, like Pontey-Lamartine. /p>

     Graves means in French round Pebbles: the fact that the soil gave its name to the appellation is quite uncommon and tells a lot about the importance in Bordeaux of this stones that were brought their by the Garonne River that used to be way larger millenniums ago.

    The opinion of the sommelier

    It’s a very typical Cru Bourgeois that I chose this month. The robe is dark and deep. The nose is complex, with hints of spice, and is very promising. On the palate, I was impressed by its perfect balance and its amazing structure. The aromas of violet and red berries perfectly pair with the aromas of licorice, sign of delicate aging in oak barrels. A very refined Cru Bourgeois, quite classical in its structure but quite original in its aromas.

Malbec used to be quite widespread in Bordeaux until the sixties. It’s used to give more structure to the wine thanks to its usually thin but abundant tannins.

    Chateau Cissac is so obviously located on an amazing terroir that vines were already planted there during Antiquity. Indeed, the castle was built on the ruins of a Roman Villa that was surrounded by vines ! Nowadays, Marie Vialard runs the estate and make everything she can to respect and honour this riche legacy./p>

    The opinion of the sommelier

    Burgundy’s red wines arefascinating : they all are elaborated with the same grape variety and yet they offer an astonishing diversity. This is due to the unique diversity of terroirs in the region. This Hautes Côtes de Beaune displays beautiful aromas of raspberry and rose delicately enhanced by a gentle acidity and very thin tannins. However, pinot noir is a fragile and demanding variety : do not hesitate to aerate it several hours before service so it fully displays its bouquet.

    In Burgundy, all the great white wines come from chardonnay and all the red from pinot noir. But if chardonnay is robust and can be planted virtually everywhere, pinot noir is different. Indeed, pinot needs sun to develop its aromas but not too much heat. Moreover, it needs wind to remain healthy. Therefore, pinot enjoys sloppy northern region, like Burgundy and Champagne where it is widely grown !

However, it’s in Beaune that Hervé chose to keep on developing the Family’s business, notably buying Château de Laborde in 1998 from Hospices de Beaune./p>

     Long strip bordering Côte de Beaune’s villages on the west, Hautes Côtes de Beaune are a succession of hills and valleys. Thus, vines are all planted on slopes which allow them to benefit from a good exposure to sun and wind. It ensures a good level of ripeness, which is very important in such a northern region, and keeps the wine healthy, also very important for pinot noir, a noticeably fragile grape variety.

    This month, I wanted to take advantage of the fabulous 2015 vintage in Bordeaux : I did that with the famous Château Lieujean, a safe bet of the Médoc vineyards, which is acclaimed by the greatest specialists. What differentiates this Cru Bourgeois is certainly its concentrated expression of black fruits accompanied by a subtle woody flavours. The tannins melt, the wine is supple, juicy and the finish is persistent and deep.

    An emblematic blend of Médoc, where Cabernet Sauvignon is predominant, associated with Merlot in smaller quantities. The Cabernet Sauvignon rather enjoys the gravelly soils of the left bank and brings an elegant tannic structure and an intense power in the mouth whereas the merlot favors the clay soils of the right bank giving balances to the wine by its suppleness and roundness.

     Located in Saint-Sauveur near Pauillac, the Château is close to the Garonne and enjoys a temperate microclimate. The Haut-Médoc’s main characteristic is its very special soils made of hard stones that lower the yields of the vines, which gives birth to ripe grapes full of quality and with concentration. It is not far from there that Chateau Lafite, Mouton Rotshchild and Latour are located.

    Languedoc is not only about strong wines with high level of tannins and aromas of ripe fruits. Château de Jonquières is quite the opposite with its delicate aromas of flowers, slightly enhanced by white pepper. It’s always nice to see that some winemakers enjoy giving a different expression of their terroir. This freshness and length is particularly remarkable.

    It’s uncommon to see such a balanced blend ! In this case, that also gives a perfectly balanced wine : syrah brings tannins and a bit of pepper, grenache provides alcohol and the hint of ripeness, carignan gives flowery aromas and cinsault brings some extra acidity that underline the wine’s freshness.

    Château de Jonquières was built in the 12th Century and has been since transmitted from generation to generation. And quality is not something new there, as in 1889 one of their wines received a silver medal in a wine competition which allowed them to start selling their wines in Canada ! Nowadays, Charlotte et Clément de Béarn (32nd generation!!) are in charge of carrying on the Family legacy./p>

     Chateau de Jonquières is located just under the Causse du Larzac plateau. The vines enjoy warm southern winds from the Mediterranean as well as fresh masses of air falling down from the nearing plateau. Therefore, the temperature gets neither too high nor too low. This kind of conditions favours a slow but regular maturation which gives to the grapes a remarkable complexity.

    Patache d'Aux is a classic Medoc that goes through the years with a unique and constant style that regularly earns the distinction of Cru Bourgeois. The garnet robe with thick tears offers smoky, tobacco and roasting aromas, then leather notes gives way to plum and blackcurrant. In the mouth, the tannins are melted and the wine is persistent. One of my must-haves !

    On the left bank, in Medoc, cabernet sauvignon is the king grape. This noble grape variety provides the structure of the Medoc. To complete this grape, merlot is indispensable and brings flexibility and complexity to the cuvée. In smaller quantities we can find the petit verdot, for its structure, and the cabernet franc for its roundness.

    Château Patache d’Aux is an old estate which belonged since the Revolution to the Delon family. In 1932, the wines made it to the Cru Bourgeois ranking and 30 years later, the Chateau was taken over by the Lapalu family. When Jean Michel Lapalu retired in 2016, the entire team of Antoine Moueix Properties took over Patache d'Aux and have the ambition of continuing to vinify quality and terroir wines./p>

     The terroir of Château Patache d'Aux is essentially composed of clay, limestone and gravels. This stony terroir is particularly filtering and can accumulate heat to restore it to the vine and helps the ripening of its berries.

    The white version of “ Vignes du Prieuré ” was one of the first one ever to be in a VitiBox a few years ago. That’s why I’m so happy to present you this month its red version in an amazing vintage ! The colour changes, but pleasure is still there. The first nose smells orignal : it’s not that common to find aromas of fresh herbs and strawberry together. However, it’s enchanting ! Silky, fruity and powerful, it feels like biting in a ripe fruit just picked up from the tree. It’s intense and refreshing !

    The blend of grenache, syrah and carignan is very typical from the southern Rhône Valley. Genache gives fruity aromas and sweetness, syrah brings some spicy flavours and carignan gives structure thanks to its high level in tannins.

    Vines were planted in Château Gigognan when Gaule was a province of the Roman Empire. Later, the Archbishops of Avignon made this area their land along with neighbouring Châteauneuf-du-Pape. Then, various aristocratic families owned successively the vineyard, which is always good as they obviously wanted to have good wine at their table. Nowadays, Jacques and Sophie Callet perpetuate the grandeur of Château Gigognan by making wines worthy of being on the best tables./p>

     Planted on a sunny terroir, Château Gigognan’s vines are also in a place where strong winds blow, notably the warm and powerful mistral. Thus, berries ripen but keep their freshness thanks to the wind. This kind of terroir gives amazing wines : the high level of sugar and alcohol given by the sun is balanced by wind’s freshness, and the result is a powerful wine with a great length.

    This month, I have the pleasure to share with you one of my recently found jewel, which comes from one of the smallest appellation that gathers only 10 winemakers : Châteaumeillant. The wines from this terroir are appreciated for their gourmet nose of cherry, plum and pepper. On the palate, the aromas are fresh and reveals a very beautiful structure with crisp that I enjoy deeply.

    Berry Good is mainly composed of gamay. Originally from Burgundy, it is the first grape variety of the Chateaumeillant appel-lation. It brings freshness and finesse to the cuvée with aromas of red fruits and spices (pepper). Blended with pinot noir, the wine shows a greater finesse and have a nice balance.

    The story of the Nairaud Suberville vineyard began in 2011, one year after Châteaumeillant officially became an appellation. This was an amazing year for Daniel Nairaud. Former deputy director of the National Institute of Appellations of Origin (INAO), he left at 49 years his job to start an adventure and become a winemaker. His years at INAO gave him all the theoretical foundations of wine production, and today he makes his own wine for our greatest pleasure ! /p>

     The vines of Nairaud Suberville are grown on a sandy-clay soil. This terroir is typical of the appellation and it is also ideal for the gamay variety. Granitic and not very deep, the soil brings a good drainage to the vine and produces a wine with structure and body.

    This wine was a very pleasant surprise ! The appellation Côtes de Duras is pretty well known for its red wines, but this one, Le Secret de Sainte Frivole, shows that it also produces excellent white wines. The nose is characterized by a feeling of a very fresh and delicate wine with citrus aromas. Take a sip and try to detect this little iodized taste that echoes the oceanic climate of Southwestern wines. To match obviously with seafood !

    Contrary to what the name leads us to believe, the sauvignon gris (grey) is rather pale yellow. Characterized by clusters and berries of small size, it gives powerful and full-bodied wines with aromas slightly heavier than sauvignon blanc. The blend thus takes its full meaning. The sauvignon blanc brings a slight acidity and vivacity in the mouth, which balances the wine.

    Mauro-Guicheney’s family works with respect for traditions and the environment. Corinne and Didier cultivate with passion and knowhow the 30 hectares of vineyards of the family property, owned for half a century. Both passionate about vine-growing, they unite and take over the family farm in 1990 where they strive to keep the values of their ancestors. Since 2011, they also share this passion with their son who is now fully invested in this adventure. A promising wine story !/p>

     The Côtes de Duras vineyard covers over 1500 hectares and produces 65% red and 35% white. Its subsoils, composed of molasses and heavy and sticky clays called Boulbènes, are very favorable to the blossoming of white grape varieties. Producing red wines is deeply embedded in the South-West’s culture and tradition, because their food pairs better with red and they want to compete with Bordeaux.

    This wine is a true lesson of seduction. Per Dona (« for the woman » in Catalan) displays a purple red robe, releases aromas reminiscent of strawberry and cocoa and its tannins are soft as silk. Château Dona Baissas managed to put all the charms of a wine in the same bottle ; I am a spellbound man !

    If Château Dona Baissas is a typical blend of southern wines, this is for a very good reason. Indeed, this assembly forms a very complementary trio. Grenache is expressed by its notes of red fruits, the syrah gives the freshness and a hint of spice and the Carignan carries off the matter with its tannins. A trio that expresses itself perfectly under the sun of Roussillon.

    Château Dona Baissas has been classified as one of the best wines of Languedoc-Roussillon since 1988, but its reputation is older than that. During the French Empire, a bunch of Napoleon’s officers discovered this little vineyard and fell in love with the beauty of the landscape, the quality of the wine and the owner. They therefore baptized the estate Mas de la Dona (« Mas of the woman » in Catalan). If the name evolved, the Dona persisted./p>

     At 200 meters above sea level, facing the Mediterranean Sea and facing south, the vineyard dominates Roussillon. The parcels are sloping and the soil is rich in brown schists. The schist, a flaky and fractured rock, allows the grapevines to infiltrate up to 7 - 8 meters into the ground to get the rainwater and minerals it needs to be fully developed.
