  1. Château de Chambert 2012, Rigal, Cahors

Château de Chambert 2012, Rigal, Cahors

    Sommelier

    The opinion of the sommelier

Château de Chambert is one of those famous estates that has a strong positive impact on the reputation of their appellation. One of the reasons why it’s famous is because the soil never got a drop of chemical. It has been given up for a few decades and then immediately grown in biodynamics. The 2012 vintage has improved with age : the wine is powerful and velvety in the mouth with a very beautiful dense and fleshy structure.

    Feuille

    Grape variety

Malbec is the historical grape of Cahors. It brings to the appellation its tannic and powerful character, its aromas of plum and tobacco and has a good capacity for ageing. Its name of Black Wine abroad comes from its deep and very dark colour.

    Terroir

Château de Chambert enjoys a very particular soil of limestone and red clay. Limestone brings moisture and minerals to the vine. The red clay, which colour is the result of a high concentration of iron in the ground, gives the wine its power and aromas of spicy black fruits.

Puy Saint-front 2016, Castillon Côtes de Bordeaux

    Sommelier

    The opinion of the sommelier

Located next to the well-known village of Saint-Émilion, Castillon is the rising appellation in Bordeaux. It benefits from an outstanding terroir and is getting more and more popular thanks to its with attractive price / pleasure ratio. This is of course the case of the Puy Saint-Front 2016 wich shows how great can some Bordeaux wines be for good prices.

    The opinion of the sommelier

Tasting this Saint-Émilion Grand Cru was a shot of pleasure! The deep ruby colour comes along thick and promising tears. By taking over in 1997 her grandfather’s personal vineyard (he used to also be the manager of Chateau Monbousquet) Catherine Thoilliez attempted to increase the wine’s quality by making research using different vine growing techniques to only keep the ones that were giving the best grapes. /p>

Château Croix de Fillol, 2014, AOC Castillon Côtes de Bordeaux

    Sommelier

    The opinion of the sommelier

This appellation, stuck between Saint-Emilion and the southwest is a terroir I am fond of because wines there offer the same subtle minerality as in the Libournais’ appellations. I have made astonishing finds there. This château is one of those : very pleasant in the mouth, fruity and perfectly well aged.

  5. Château Chapelle Labory 2015, Cuvée Parcellaire, Fronsac

Château Chapelle Labory 2015, Cuvée Parcellaire, Fronsac

    Sommelier

    The opinion of the sommelier

At the nose, remarkable flavours of black and red berries. At the palate, you’ll be charmed by the wine’s density and its elegance. Tannins are silky, with a chocolate taste which is a signature taste of amazing warm vintages. Wines of the vintage 2015 have a very noticeable ageing potential in Bordeaux. This Fronsac can be appreciated right now or in the next two or three years.

    Feuille

    Grape variety

The soil of Fronsac exalts Cabernet Franc, a grape variety that appreciates soils of clay and limestone! It is no coincidence if it is often grown in Libournais, the part of Bordeaux where Fronsac is. It is renowned for its aromatic sharpness, its spicy aromas and the ageing potential it provides to the wine. A subtle blend that celarly shows that even added in small quantity, some grapes can change a lot the wine.

  6. Le Clos des Vieux Marronniers 2016, Maison Jean Loron, Beaujolais

Le Clos des Vieux Marronniers 2016, Maison Jean Loron, Beaujolais

    Sommelier

    The opinion of the sommelier

Only black grape variety grown in Beaujolais, Gamay reveals a very different nature in Beaujolais soils. The wine is produced from old vines, with a deep root system which gives the grape granite’s minerality and an intense level of concentration. Only good Beaujolais can offer such a deepness of fruity aromas.

    Feuille

    Grape variety

Gamay : the Beaujolais signature’s grape variety since Philippe le Hardi, Duke of Burgundy, banned it from Burgundy in the 14th century ! When we talk about Gamay, it's usually black Gamay with white juice. This grape variety likes the clay-limestone and granite soils of the region. It gives us gourmet wines, round and fruity with intense colouring.

L'été Gascon, 2013, Domaine de Pellehaut, Côtes de Gascogne

    Sommelier

    The opinion of the sommelier

We already offered a wine from the Pellehaut estate a few months ago. We got many enthusiastic feedbacks, so I decided to select another wine from the same winemaker. Once again, it is a white wine, but a sweet wine this time. Balanced, and surprisingly light, which is rarely the case with sweet wine, this wine is one of my favourites of the moment and this is a very good value for money!

     Anecdote

     A winemaker, a family

A long time ago, many farms in the south west of France were making their own wine. Most of them gave up farming to only focus on wine, and Pellehaut is one of the rare estate still mixing farming and winemaking. It’s a very precious resource for the culture: the cows are fed the cereals and then produce the best natural fertiliser.

    The opinion of the sommelier

I chose for you this nice Beaujolais Village by Château de l’Eclair, a winery I especially appreciate as I used to teach there wine tasting to tourists from all over the world ! This wine is a good example of the best Beaujolais can give when it comes to produce simple yet quality wines. I suggest you enjoy this wine before dinner paired with a nice charcuterie board. Will you be able to feel the carbonic maceration ?

    Feuille

    Grape variety

This variety is often called “gamay noir à jus blanc” which means “black gamay with white juice”. The reason is that this variety is special: it has a very dark skin and a very white flesh. 98% of Beaujolais’ vines are gamay. Therefore, Beaujolais alone produces the two third of gamay grown worldwide. Gamay gives to the wine fresh fruity aromas with sometimes a hint of spice.

“L’éclair” refers to a device that allows winemakers to easily spray natural fertilisers on the vines. It was invented by Victor Vermorel, a French eccentric politician and inventor. Vermorel bought Château Convert in 1871 from a rich family from Lyon and gave it the name of his invention.

    Terroir

Beaujolais is divided between two kinds of soils: granite in the north and schist in the south. The best wines are elaborated on granitic soils, like the ones on which Château de l’Eclair’s vines are planted. Granite is known to give refinement and freshness to the wines as it stores water deeply and slowly waters the roots one drop after another while providing soft warmth to the grapes.

« When Michel Chapoutier, a winemaker considered as a god in the Rhône Valley, and Yannick Alléno, a famous chef (who gets 3 stars in the Michelin guide) met, they immediately decided to produce a cuvee together. Michel Chapoutier uses head-pruned vines, that are thirty years old. Vinegrapes benefit from a lot of wind, that enables grapes to be well-ventilated and that avoids the development of mould.

« That is a cuvee with a high alcoholic degree: 14,5°. It is ideal to match with your main dish, but you should probably plan a nap in the afternoon ;) However, this cuvee is very well-balanced, and surprisingly, the alcoholic degree is quite pleasant. You will probably enjoy its complex nose with bay tree, juniper berry and garrigue aromas. Share it during a long dinner with old friends! »

     Anecdote

     A wine, a family

This domain starts to be famous, and I am sure that it will have a lot of success within the coming years. This domain was created bytwo men that are passionate by vinegrapes and seduced by this exceptional terroir: Matthias Wimmer, a sommelier that lives wine, and Christian Raimont, owner of the domain since 1996.

     Terroir

    Terroir

Eole domain is spread on 30 hectares in Eygalières, at the bottom of Alpilles, in Provence (South of France). Provence is a dry region, not ideal for culture. But, the alliance of these weather conditions and a soil that is not very fertile makes of this place an exceptional terroir. Grapevines are planted on sandy limestone soils with a lot of stones. Subsoil is deep and filtering, that enables to drain and heat up soil.

Vineyards that produce the Grignan les Adhémars AOP benefit from southern and northern influences of the Côtes du Rhone region. In France, in the Gers region, the Béraut family continues to carry on the mixed farming tradition: vineyards, bovines and grains. We don’t have time to be bored in the Pellehaut domain! Winemaker

Year after year, Sylviane Garcin Cathiard is building a small empire in the Bordeaux wines. She bought four different Châteaux in fifteen years : Château Branon, Clos l’Eglise Pomerol, Château Barde-Haut, and of course the Château Haut-Bergey.

     Terroir

    Terroir

The terroir of the Château Haut-Bergey is spread on 25 hectares of vineyards cultivated on an argilo-siliceous subsoil, mix of sand and clay. We often say that the clay soils produce wines that are solid, strong and alcoholic while the siliceous soils produce fine wines, with subtle aromatic hints. The union of the clay and the silica sand guarantees a terroir of high quality.

    Terroir

The Domaine Mas du Blanc is spread over 19 hectares, cultivated on a schist stone subsoil. The wines that are growing on slaty soils have hints of undergrowth, and cooked and dried fruits. These wines are also known for being more alcoholic, with a long and pleasant aftertaste. But, it is harder to work on slaty soils due to a lack of limestone, that brings oxygen to the soils.
