    The opinion of the sommelier

    An artist wine by the well-known and well gifted Jean-Marc Biet ! The nose is subtle, displays delicate flowers aromas and opens to small red berries flavours. In the mouth, a salty taste gives soul to the wine. This is a superb Loire Valley wine, fresh and elegant, of great finesse, charming and easy to drink in all circumstances. A single bottle might not be enough.

    This wine was elaborated with gamay, a variety that comes from Beaujolais, in southern Burgundy, where it is still the main variety grown. Gamay is amazing, it offers a nice olfactory intensity with notes of red fruits which can be surprising considered that the flesh of this grape is white !

    The Biet family estate is one of the leading estates in the large Touraine appellation. The family’s know-how and passion has been transmitted on four generations and evolves with the desire to produce wines that respect the terroir and people who live there. Nowadays, Jean-Marc and his daughter Julie continue to write the history of the estate by vinifying wines that remind their personalities : pleasant, aromatic and with character./p>

     Located between Tours and Bourges, Jean-Marc Biet’s estate is located on the south and south-east slopes of the Cher River. A well exposed and balances terroir thanks to its soil composed of clay that offers freshness to the grapes, and limestone that brings subtlety and minerality.

    The opinion of the sommelier

    Cahors is the birthplace of Malbec and still produces the purest wines from this now widely known grape variety. Not far from Cahors, Calicôt comes from vineyards growing along the bank of the Lot, a humid terroir that gives fruitier wines with the extra freshness that makes it easy to drink and to appreciate at any time.

    Malbec, the most famous grape variety of the region, blooms on the gravelly and sandy soils of the Southwest. It as well likes large temperature gaps between day and night, a phenomenon that it also found in the Andes in Argentina where it became the main black grape variety. Blended with other grape varieties, it brings to the wine its structure, its complexity, and a ripe fruitiness.

    We are very proud to present this wine from the Domaine Clos du Chêne, a family estate now ma-naged by Valérie, daughter of Marie-Françoise and Jean-Paul, who leads a sustainable viticulture that respects the environment. Experts of Malbec, they produce Cahors wines as well as alternative Malbec like Calicôt which allow them to elaborate all styles of Malbec wines./p>

     Fully replanted in the 70s, the vines are now old enough to express all the fullness of the clay-limestone soil. Concerned with the environment, the winemaker Valérie Roussille implemented reasoned viticulture techniques. On each plot, yields are adapted and controlled to obtain perfectly ripe and healthy grapes.

    I have the pleasure to share with you a Côtes de Bourg wine as I love them ! On the right bank of Bordeaux, this appellation gives birth to beautiful structured red wines. The nose is deliciously influenced by Merlot : red and black fruits, enhanced by subtle flavours of pepper and even cocoa ! In the mouth, the richness of its structure matches perfectly with the delicacy of its freshness.

    Grape variety

    Merlot is the most widespread grape variety in Bordeaux and is also the favourite grapes of blackbirds named “merle”. This bird, as dark as the bay, has even given its name to the grape because merlot means 'merle’ in the local dialect. Merlot produces round, smooth wines with delicious aromas of red and black fruits.

    As a child, it was not uncommon to see Philippe Modat running in the middle of the family vineyard. He took part in his first harvest at age 20 while still studying law in Bordeaux. Then he went to meet the best winemakers in France and abroad to learn the trade before returning to the vineyard estate to share his passion./p>

     Maison de Luze was created in 1820 by Baron Alfred de Luze, a visionary man and fine negotiator, who took part in the conquest of the world by the wines of Bordeaux. Today known as Grands Vins de Gironde, this institution is one of those big Bordeaux wine mer-chants that have built a century-old know-how and who contribute to the success of the wines of the region.

    Château de Chambert is one of those famous estates that has a strong positive impact on the reputation of their appellation. One of the reasons why it’s famous is because the soil never got a drop of chemical. It has been given up for a few decades and then immediately grown in biodynamics. The 2012 vintage has improved with age : the wine is powerful and velvety in the mouth with a very beautiful dense and fleshy structure.

    Malbec is the historical grape of Cahors. It brings to the appellation its tannic and powerful character, its aromas of plum and tobacco and has a good capacity for ageing. Its name of Black Wine abroad comes from its deep and very dark colour.

    Philippe Lejeune, owner of the vineyard, has chosen a fully organic and biodynamic approach, and preserves biodiversity of the vineyard by planting other crops and raising cows and black pigs. Accompanied by Stéphane Derenoncourt, a famous oenologist from Bordeaux, they produce terroir wines with remarkable finesse./p>

     Château de Chambert enjoys a very particular soil of limestone and red clay. Limestone brings moisture and minerals to the vine. The red clay, which colour is the result of a high concentration of iron in the ground, gives the wine its power and aromas of spicy black fruits.

    First noticed around 5 years ago, Modat is the rising wine estate in the Roussillon region ! The wines are splendid and I am very proud to make you discover "Sans plus attendre". A very gourmet wine, powerful and very fine at the same time. On the palate, the wine seems juicy, opulent, deep and of rare elegance. A wine of great balance and complexity found in many great restaurants.

    « Sans plus attendre » is composed of three grape varieties extremely widespread in the Languedoc Roussillon namely syrah, which brings its finesse and its spicy and violet aromas, grenache and its opulence and its aromas of red fruits and finally the carignan for its tannic structure and its generosity. Complementary, they make together the reputation of the great wines of the south.

     The particularity of the Modat estate lies in its basements, which bears the pretty name of "gneiss". It is a granitic sand that is at the origin of elegant wines thanks to its remarkable ability to drain water. It makes red wines with silky tannins, light structure and some freshness, quite useful in sunny Roussillon.

I am very proud of it : Piquito conquered me with the power of its aromas (between plum, black cherry, and liquorice), its roasted and mocha tastes in the mouth, raised by a touch of superb tannins and a mesmerizing depth.     Monastrell, also known as mourvèdre in France, is a grape from Spain. It is a grape variety that supports warm climates and prefers clay soils, fresh and shallow. Monastrell gives wines rich in tannins with quite mature aromas of spices and black fruits.

    It is a union of winemakers who created La Bodega de Luzon. Over time, this great gang of friends has made a name for itself within the Jumilla appellation by constantly trying to enhance the style of their wines and the harmony between tradition and innovation. An innovative spirit that is also found on the labels of their bottles !/p>

     The Jumilla appellation is located in the south of Spain on the Mediterranean coast, where vines enjoy exceptional sunshine. The vine is planted in altitude, between 400 and 900 meters high and enjoys a very mild climate. The limestone also contains clay that preserves from moisture during summer and provides a regulated water supply to the vine.

    Located next to the well-known village of Saint-Émilion, Castillon is the rising appellation in Bordeaux. It benefits from an outstanding terroir and is getting more and more popular thanks to its with attractive price / pleasure ratio. This is of course the case of the Puy Saint-Front 2016 wich shows how great can some Bordeaux wines be for good prices.

    Cabernet Franc is far from being the most widespread grape variety in the Bordeaux region. However, thanks to its ability to mature early, it is also used further north in the Loire Valley. It brings to the wine notes of crunchy fruit and very nice spicy flavours.

    In the 18th century, Baron Alfred de Luze founded Maison A. de Luze & Fils, first specialised in maturing and ageing the wines before selling those. Man of vision and a fine negotiator, Baron De Luze was one of the pioneers in the export of Bordeaux wines in new countries. In addition to its international network, Maison De Luze bought several chateaux in Bordeaux such as Château Paveil, a very old cru from the Margaux region, or Château Malleret in Haut-Médoc./p>

     The appellation "Castillon Côtes de Bordeaux" is located on the right bank on the slopes getting down from Saint-Émilion. Coming from the same limestone plateau as Saint-Emilion, the wines of the appellation benefit from a privileged geographical situation with a southern exposure and a difference in altitude of more than 100 meters.

    Located in the heart of the mountains of Montmirail, this vintage refinement honours the great red wines from the southern part of the Rhone Valley. The nose is subtle and generous : a delicious blend of candied fruits and thyme. A Gigondas full of sun, balanced, with this aromatic power found in all the good wines of the region.

    Grenache noir, the famous grape of the southern Rhône Valley, expresses its full potential on the land of Gigondas. Indeed, limiting sunshine in the morning, the mountains of Montmirail allow a good ripening of berries which need time to express themselves better. It dominates the blend and brings to the wines the tannins, the body and a nice ageing potential.

     The vineyard of Gigondas is an extremely diverse terroir made of pebbles, clay, safres and limestone marls. The Dentellis cuvée takes its power and complexity from this exceptional soil.     Pinot noir can blossom outside of Burgundy : there is the proof with this wine from Savoie. The freshness and the altitude of Savoy are great to pinot noir and as a great lover of Savoyard wines, it is for me a great pleasure to make you discover this original wine. The mouth is full of freshness and the tannins are very subtle.

    Pinot Noir is a subtle grape that fully blossoms on the clay and limestone soils of the Savoyard vineyards. In contrast to wines of the South, Pinot Noir has a low concentration of sugars and alcohol. It gives intense wines but which remain digestible with a very good tannic structure, supple and soft.

    To the Vachers, wine is first and foremost a family story. Adrien Vacher is the founder of the winery that bears his name. Nowadays, Charles-Henri is proud to highlight his family traditions through typical wines of Savoy. He shares this pride everyday with Pauline and Charlotte, his two daughters, who also work on the estate./p>

     Savoy is a great land of wine. Yet this region went from som trouble when in the 13th century, Mount Garnier collapsed causing considerable loss of life. This tragedy turned into an opportunity when in the eighteenth century, vine growers planted vines at the very place where the collapse took place, which gave birth to exceptional wines.

    I am a huge lover of Gros Manseng. This grape variety, mainly grown in the South-West, creates fruity wines, gathering both sweet and exotic aromas, with freshness that balances the wine and makes the third glass as enjoyable as the first one... It allows sweet and sour pairings which are very interesting, and I really like opening a bottle with friends with a good goat cheese served with honey or jam.

    Gros Manseng is a typical Southwestern grape variety. It can be at the origin of sweet or dry wines. On a dry wine like Trio Tempo, it offers an impression of sweetness subtler than with a sweet wine, on a fresh frame and with hint of acidity which creates the balance. A fruity and fresh experience !

     Located right in the heart of Gascony, the vineyard benefits from an oceanic climate. Thanks to the proximity of the Pyrenees Mountains, the wide temperature gap between day and at night is ideal to ripen the grapes while protecting their aromas. Indeed, the production of sugars is stimulated during the hot period of the day and the natural acidity is increased during the night.

    At the nose, remarkable flavours of black and red berries. At the palate, you’ll be charmed by the wine’s density and its elegance. Tannins are silky, with a chocolate taste which is a signature taste of amazing warm vintages. Wines of the vintage 2015 have a very noticeable ageing potential in Bordeaux. This Fronsac can be appreciated right now or in the next two or three years.

    The soil of Fronsac exalts Cabernet Franc, a grape variety that appreciates soils of clay and limestone! It is no coincidence if it is often grown in Libournais, the part of Bordeaux where Fronsac is. A subtle blend that celarly shows that even added in small quantity, some grapes can change a lot the wine.

     Bordered on the West by the Dordogne River and on the East by the Isle River, the appellation Fronsac gathers magnificent landscapes of plateaux and hillsides. Located just a few miles away from Saint-Émilion, its clay and limestone soil is complex and even have its own specific name : "the molasse of Fronsadais".

    Tasting this Saint-Émilion Grand Cru was a shot of pleasure! The deep ruby colour comes along thick and promising tears. The nose is complex, displaying at the same time fruity aromas and flavours of spices and roasting. On the palate, the wine is rich, the tannins are refined yet very present, and you will definitely appreciate its astonishing length.

     Located next to the famous hillside of Pavie, in the South of the village of Saint-Émilion, the 6 hectares of Château Puy-Razac benefits from a soil of great quality that it shares with the famous neighbouring Château Pavie. The name of the property is a derived of the name of the locality where stands the castle: "Puits-Razat". Note as well that Catherine Thoilliez claims the choice to make no other wine as this one to focus on it.

    The appellation Hautes Côtes de Beaune is famous for its delicate red wines. This vintage is not an exception: a bright, shiny, cherry-red colour, and candied redcurrant and strawberry aromas, enhanced by spicy flavours ! On the palate, the wine is subtle, carried by a generous silky texture. The signature of a nice Burgundy wine, as I love them !

    Pinot noir is a fragile grape variety but it has one great strength : it tells a lot about the terroir it grew on.     Light and subtle, this Touraine wine has an enchanting nose that reveals notes of red fruits and noble vegetal flavours. On the palate, the wine is fresh and displays nice crisp and juicy red berries aromas. There is just enough tannin to give to the wine structure and length.

    Tours de Plagnac fully reveals the best characteristics of the terroir of Médoc. Its garnet color is elegant. Make the wine swirl, and you’ll see thick tears on the glass and you’ll smell deep flavours of cedar, blueberry and liquorice. On the palate, soft tannins show that this wine can be kept a little in the cellar but is also great to drink now.

    Château Plagnac was bought in 2011 by Jean-Michel Lapalu, heir of Claude Lapalu who started to make wine in Château Patache d’Aux when he came back from Algeria in 1964.     Only black grape variety grown in Beaujolais, Gamay reveals a very different nature in Beaujolais soils. The wine is produced from old vines, with a deep root system which gives the grape granite’s minerality and an intense level of concentration. Only good Beaujolais can offer such a deepness of fruity aromas.

    Gamay : the Beaujolais signature’s grape variety since Philippe le Hardi, Duke of Burgundy, banned it from Burgundy in the 14th century ! When we talk about Gamay, it's usually black Gamay with white juice. This grape variety likes the clay-limestone and granite soils of the region. It gives us gourmet wines, round and fruity with intense colouring.

    Maison Jean Loron is one of the oldest and largest vineyards owners in the south of Burgundy, located between Roche de Solutré in Mâconnais and Moulin à-Vent in Beaujolais. The winery was founded at the end of the 17th Century and is now 135 hectares wide, which is quite impressive for South Burgundy and Beaujolais !/p>

     Located in the heart of the Pierres Dorées area (Golden Stones in French), facing south-east and west in the magnificent little village of Charnay, vines are planted on granitic soils and are 50 years older than the local average with a plot that will soon turn a hundred ! The very filtering soil gives water to the roots, but not too much, which is good for the Gamay, a lazy grape variety.<

    This month, I wanted to take advantage of the fabulous 2015 vintage in Bordeaux : I did that with the famous Château Lieujean, a safe bet of the Médoc vineyards, which is acclaimed by the greatest specialists. What differentiates this Cru Bourgeois is certainly its concentrated expression of black fruits accompanied by a subtle woody flavours. The tannins melt, the wine is supple, juicy and the finish is persistent and deep.

    An emblematic blend of Médoc, where Cabernet Sauvignon is predominant, associated with Merlot in smaller quantities. The Cabernet Sauvignon rather enjoys the gravelly soils of the left bank and brings an elegant tannic structure and an intense power in the mouth whereas the merlot favors the clay soils of the right bank giving balances to the wine by its suppleness and roundness.

    The nose is remarkably delicate, with notes of candied fruits and black berries, and a hint of smoke. On the mouth, the tannins are soft. The wine gives off a remarkable balance between power and freshness. This vintage of Etre et Renaître shows the inestimable potential of Carignan, a variety that used to be despised, especially when it comes from old vines.

    Carignan, which is the main variety in this blend, was long considered as a low-quality grape only used to make huge quantity of light wine. However, when the vines are in their fifties and later, yield decreases and the wines become a lot more intense and complex. Add the tannin and peppery aromas of Syrah and the softness of Grenache, and you get this great wine !

    At the 1st Century, Roman soldiers were already growing grapes and making wine in Corbières. However, it was only in 1985 that Corbières was recognized by the National Institute of Appellations of Origin (INAO). Etre et Renaitre is the fruit of the collaboration between two winemakers who grow different grapes and put their harvest together to make a well balanced wine. /p>

     As Languedoc’s reputation is growing, the winegrowers started a process of hierarchisation of the vineyards. That’s how the Corbières-Boutenac appe- llation was created : to distinguish one of the best terroirs of the larger Corbières appellation. Indeed, grapes harvested on this specific terroir of Boutenac give deeper and more complex wines than elsewhere in the area.

    Pierre Gaillard is one on the few Rhône Valley’s star winemakers. As Pierre ages, he is slowly putting his daughter Jeanne in charge of his best plots of vines. This wine shows that Jeanne is more than a good choice to take over : this is the perfect mix between Gaillard’s amazing skills and a great vintage.

    I have already drunk nice Corbières but this one is quite exceptional ! Really full-bodied and creamy, it displays magnificent ripe blackberry jam aromas of and has a peppery finish that lingers on the palate. A powerful and complex wine, perfect for summer : garrigue and sweetness of the Mediterranean put in a bottle !

    With this blend, the winemaker put the South in a bottle. Indeed, we find in this wine all the qualities of the great southern wines. Grenache gives the wine its unctuous touch and its amplitude in the mouth and Syrah displays beautiful spicy flavours and carries all by its refined tannic structure. Caliente !
