The opinion of the sommelier« When Michel Chapoutier, a winemaker considered as a god in the Rhône Valley, and Yannick Alléno, a famous chef (who gets 3 stars in the Michelin guide) met, they immediately decided to produce a cuvee together. They produced this cuvee in order to put it on the wine list of Yannick Alléno’s restaurants. It is a gastronomic wine, that will probably surprise you with its lard mouth, slightly smoked. I would like to thank Michel Chapoutier again for letting us get the remaining stock of this cuvee. »
Terroirshallow soil, composed of granite. It is a typical terroir of the Saint-Joseph designation. Michel Chapoutier uses head-pruned vines, that are thirty years old. Vinegrapes benefit from a lot of wind, that enables grapes to be well-ventilated and that avoids the development of mould.
Grape varietyShiraz is one of the most cultivated grape varieties in the world. It produces wines with a dark robe, and powerful and spicy aromas, such as violet, black pepper or liquorice. A wine produced with Shiraz is perfect to drink after several years in your cellar.
VintageThere were a lot of rain in the Rhône Valley in 2011, as well as high temperatures. Temperatures were particularly high during summer in the Tain-l’Hermitage municipality, and it also rained a lot. You will probably recognize the aromas and flavors of the sun in this cuvee as well as the freshness coming from the rain.
